Some NM Thanksgiving Feasts to Focus on Fresh, Organic Veggies

LAS CRUCES, N.M. - The traditional Thanksgiving Day feast for some in New Mexico may include varieties of lettuce, tomatoes and other produce fresh from the farm - and grown without any pesticides or chemicals.

Don Bustos, director of the American Friends Service Committee of New Mexico, said his organization works with farmers year-round, teaching them sustainable growing practices. He said Turkey Day for many in the Las Cruces area and other places in the state will include some of the best-quality organic vegetables in the nation.

"A lot of the times the produce is harvested just a few hours before it's delivered to the customers themselves, and then before dinner's prepared," he said.

Bustos said some of the veggies also are sold at farmers' markets and at the local co-op in Las Cruces. He said AFSC growing methods include using solar energy and water conservation practices so that farmers won't exhaust their resources.

"We're in a method of trying to make money to pay the bills, and still protect our land and water for future generations," he said.

Bustos said farmers he works with grow a wide range of crops that include salad greens, radishes, turnips, potatoes and chili peppers.
